Vegan Banana Coconut Muffin

I love these vegan banana coconut muffins because they are so soft in the inside and crispy outside. They are, moist, tender, and are loaded with coconut goodness. It is made with whole wheat flour, ripe bananas, coconut milk, coconut oil and coconut sugar! Coconut lovers will go crazy for these muffins!

Ingredients
  1. 3 whole wheat flour
  2. 1 1/2 cup coconut sugar
  3. 2 tsp cinnamon
  4. 2 tsp baking powder
  5. 1 tsp baking soda
  6. 1 tsp salt
  7. 2 cups mashed ripe bananas
  8. 1/2 cup canola oil
  9. 1/2 coconut oil
  10. 1 cup coconut milk
Instructions
  1. Preheat oven to 350 degrees F (175 degrees C). Line muffin cups with paper liners.
  2. Mix flour, coconut sugar, cinnamon, baking powder, baking soda and salt together in a large bowl. Stir bananas, canola/coconut oil, and coconut milk together in a separate bowl, mix banana mixture into flour mixture until just combined.
  3. Fill muffin cups 3/4 with batter and bake for 30-35 min in the preheated oven.
  4. Let it cool, sprinkle some cinnamon on top of each muffin and now comes the best part, enjoy!!
