These Vegan Last-Minute Party Snacks were the perfect little bite of food — satisfying but not too filling. Made these for a big group and they were very popular! There was plenty for everyone, and they turned out really well!

Ingredients
  1. Vegan Cottage Cheese
  2. 250g cashew nuts (soaked in water for 4hours and drained)
  3. 100ml almond milk
  4. 1 tsp cumin
  5. grated lemon peel
  6. 2tbsp Juice of lemon
  7. salt and pepper to taste
  8. green onions (chopped)
  9. crackers
  10. Quesadilla Bites
  11. 1 can cannelloni, more if you prefer
  12. 1 small cherry tomatoes (diced)
  13. 1 green onion (chopped)
  14. 2 tsp. nutritional yeast
  15. salt and pepper
  16. 1 large tortilla
  17. Hummus Veggie Wrap
  18. 1 large tortillas
  19. 1⁄2 cup hummus
  20. 1⁄8 cup shoestring carrots
  21. 1/8 cup gabbage
  22. salt and pepper
Instructions
  1. For the Cottage Cheese - Add all ingredients to a food processor and mix/pulse until well combine and creamy. Place 1 tbsp on each cracker and garnish with green onions. Store remaining cheese in the refrigerator to keep fresh. Lasts for several days.
  2. For the Quesadilla Bites - Smash the cannellonis and spice it up with salt, pepper and nutritional yeast. Add the tomatoes and onions combine well together. Place one tortilla on a non-stick pan and spread cannelloni mixture evenly out. Place another tortilla on top and squeeze together. Heat for a few minutes on each side until warmed through.
  3. Hummus Veggie Wrap - Spread hummus over tortilla and sprinkle with salt and pepper. Add assorted veggies, roll up tightly and slice in 4-5 pieces diagonal, enjoy!
