Raspberry Granola Parfait

This is one of my favorite and most delicious ways to eat granola, especially homemade granola. You can have this as a breakfast or dessert. I had some raspberries in the fridge, but you can definitely use any berry. So fun to make these in a couple of mason jars, and then keep them in the fridge. You might find yourself sneaking a bite here and there throughout the day. I just couldn’t leave these alone, enjoy!

Ingredients
  1. FOR THE GRANOLA
  2. Preheat oven to 350 degrees.
  3. 3 cups old fashioned oats
  4. 1/2 cup packed dark brown sugar
  5. 1/4 teaspoon salt
  6. 1/3 cup agave or maple sirup
  7. 3 tablespoons coconut oil
  8. 1/2 teaspoon vanilla extract
  9. FOR THE SWEET CREAM YOGURT
  10. 1 cup plain soy or coconut yogurt
  11. 1 tablespoon heavy coconut cream
  12. 1 1/2 tablespoons agave or maple sirup
  13. FOR THE PARFAIT
  14. 1 cup sweet soy yogurt crem
  15. 1 cup granola
  16. 1 cup berries (mashed and mixed with agave or maple sirup)
Instructions
  1. FOR THE GRANOLA In a large bowl, combine oats, brown sugar and salt and mix together.
  2. In a small bowl, melt agave/maple sirup and coconut oil together in the microwave for 20 seconds. Add vanilla extract.
  3. Combine agave/maple sirup mixture into oat mixture and stir well to coat.
  4. Spread the oats evenly onto a parchment or silpat lined baking sheet. Bake for 5 minutes, then stir the oats around on the baking sheet. Return to the oven for 5-7 more minutes. Watch closely for the granola to turn a light golden brown and let it cool for completely.
  5. FOR THE SWEET CREAM YOGURT In a small bowl, whisk together yogurt, agave/maple sirup and cream until smooth. Refrigerate until ready to use.
  6. FOR THE PARFAIT In jars or glasses, layer 1/4 cup granola, followed by 1/4 cup soy yogurt cream, followed by 1/4 cup berries. Sprinkle some granola on top and your done!
Notes
  1. Refrigerate until ready to serve. The granola will soften up a bit as it sits in the fridge, so if you prefer it to stay crunchy, serve immediately.
