Servings: 8
Course: Dessert

Ingredients

For the Crust
  • 1 cup raw almonds or walnuts
  • 1/2 cup shredded coconut
  • 6 pieces soft Medjool dates pitted
  • A pinch sea salt
For the Filling
  • 2 cup raw cashews soaked overnight, then drained
  • 1/2 cup coconut cream
  • 1/4 cup maple syrup
  • 1/4 cup fresh lemon juice
  • 1 tsp pure vanilla extract
  • 1 cup fresh or frozen berries
  • 2 Tbsp coconut oil melted
For the Topping (optional)
  • Mixed berries
  • Edible flowers or physalis
  • Freeze-dried berry powder for dusting

Method

  1. Blend all crust ingredients in a food processor until sticky and crumbly. Press into a parchment-lined pan.
  2. In a high-speed blender, blend cashews, coconut cream, maple syrup, lemon juice, and vanilla until smooth. Set aside half the mixture.
  3. Blend blueberries into the other half to create the purple layer.
  4. Pour the blueberry layer onto the crust, then layer the plain cream on top (or swirl for a marbled look).
  5. Freeze overnight or until firm.
  6. Top with fresh berries and a sprinkle of berry powder. Slice and enjoy chilled!

Notes

For the creamiest texture, make sure to soak your cashews for at least 4–6 hours or overnight. If you're short on time, a quick soak in hot water for 30 minutes can work in a pinch, but the longer soak gives a smoother, silkier result. Also, using high-quality maple syrup, vanilla extract and fresh lemon juice really elevates the flavor. Don’t skip the pinch of salt, it brings all the sweetness and tang into perfect balance!
